Cooking is based on a search for the best raw materials and continual experiments using the newly selected products to convey the flavours of the land in a personal, sophisticated gastronomic, but never ostentatious, language.

The rooms in the new restaurant were designed by the Milanese interior designer Nicola Gallizia, who expertly interpreted Al Mercante’s historic identity in a modern, contemporary key.
