Al Mercante makes a point of traditional dishes in its cooking, leaving plenty of room in its menu for personal choices served by the house.
Extra virgin olive oil.
Extra virgin olive oil is a blend made of the Leccino, Moraiolo and Frantoiano olives, typical of the Lake Trasimeno area, where the family farm business produces it in their own cold-pressed mill.
Flours.
The flours used to make bread and breadsticks are organic flours.
Meat.
The meat, never from intensive cattle breeding farms and prevalently bred in pastures, is selected by our chefs.
Fish.
Selecting fish is left to our suppliers, depending on what is available in the Milan fish market.
Fruit and vegetables.
Fruit and vegetables are supplied following seasonal rotation of crops, with special attention paid to local produce.
